I play both (and about five other MMOs - how sad is MY life?) and while I really like WoW, I always prefer EQ2. Lots of things set it apart:
1. The player community - EQ2 has a much better player community, at least if you filter out the 70-79 channel (our version of Crossroads chat).

Overall, I just find the players more mature, friendlier and more experienced gamers.
2. As mentioned above, it is more sophisticated. It takes more effort, more skill, more time - WoW holds your hand and points you in the right direction. EQ2 is by no means a really difficult MMO, but it trusts its players to figure certain things out for themselves.
3. A wide diversity of playstyles and things to do. From collections to player housing to raiding to crafting, EQ2 just has more variety to it than WoW.
4. Look and feel. Unlike some, I adore WoW's painted, color-saturated look. I think it is beautiful - but realistic, it is not. That pretty much ruins any sense of immersion for me. When I play WoW, I am always keenly aware that I am playing a videogame. While EQ2 is not the MOST visually stunning game out there (at the appropriate graphics settings, I would give that nod to Vanguard), it is still pretty darn good and with a more realistic look than WoW that actually makes you feel more like you are part of that world.
Try it - and give it time. It is a game that really grows on you, particularly if you find a good guild/group to adventure with. As with all MMOs, grouping is more fun than soloing!
